), which is a traditional, ultra-thin, two-layered flatbread.

The Technique: Two small dough balls are rolled out individually. One is coated in oil/ghee and dusted with flour, and the other is pressed right on top of it. They are rolled together into a single, paper-thin chapati and cooked on a griddle (tawa).

The Result: The heat creates steam between the layers, causing them to puff and easily separate into two translucent, incredibly soft rotlis.

How it’s Served: It is traditionally slathered with ghee and served during summer months alongside aamras (sweet mango pulp).
